Instant Pot Sweet Potato Chipotle Chili is the perfect soup for this cold weather that has extended into February. It's also a healthy chili, packed with sweet potatoes, meat, and stewed tomatoes from our garden.
This was my first time trying this chili, it is so hearty! You couldn't help but have seconds. I like adding the cauliflower to this soup. It was a great addition!
Kids are keeping us pretty busy with basketball games and practices. I guess it gives us something to do during the winter, before it starts to stay lighter later in the evening. Then we know baseball and softball is closer.
In the past week, we have added one more to our family, a yellow lab puppy. She is nine weeks old now. The kids are so excited to have her around!
Preparing this Sweet Potato Chipotle Chili was so easy in the Instant Pot. I cooked it on Manual for 15 minutes. It tasted so good, like it had been cooking on the stove top all day!
INSTANT POT SWEET POTATO CHIPOTLE CHILI

INGREDIENTS FOR INSTANT POT SWEET POTATO CHIPOTLE CHILI
1 pound hamburger
1 chopped onion
1 minced garlic
2 1/2 cups broth
4 cups (32 ounces) stewed tomatoes
4 cups chopped sweet potatoes, 2-3 large sweet potatoes
2 chipotles, chopped
3 cups of chopped or riced cauliflower
1 chopped red pepper
1 tsp cumin
1 tsp paprika
1/2 tsp Chugwater chili powder
1/2 tsp salt
1/2 tsp pepper
HOW TO MAKE INSTANT POT SWEET POTATO CHIPOTLE CHILI
1. Using the Brown setting on the Instant Pot, brown hamburger in Instant Pot with chopped onions and garlic.
2. Peel and chop sweet potatoes. Place in a glass bowl, add 1/8 cup water, and put in the microwave on High for 2 minutes.
3. When the hamburger is ready, add the chicken broth, stewed tomatoes, sweet potatoes, chipotles, cauliflower, cumin, chili powder, paprika, salt and pepper. Stir.
4. Secure lid to Instant Pot, make sure steam valve is closed.
6. Set to Manual/Cook for 15 minutes.
7. Natural release for 10, then quick release.
NOTE ON INSTANT POT SWEET POTATO CHIPOTLE CHILI
This could be also prepared in the Crock Pot on Low for 4-5 hours, or on High for 3-4 hours.
Use your favorite meat, hamburger, pork, chicken or turkey.
Top with cheese, cilantro, tortilla chips.
