Instant Pot Beef Vegetable Stew




Ever have that one meal you crave? It's comfort food at its finest, especially when cooler weather is here to stay.   I challenged my husband one evening I could make Beef Vegetable Stew in the Instant Pot.  He didn't say much, just raised an eyebrow.  I took that as a challenge.  Beef Vegetable Stew is best when cooked all day. Right? During harvest, I don't have all day to cook.  I was going to put the Instant Pot to the test.



What is the difference between soup and stew?  Stew is heartier, thicker.  Soup has more liquid.  Add more juice to this recipe if needed, I was using a 6-qt Instant Pot. The pot was full with all ingredients mixed in.  It took awhile to set up the pressure, but the Stew/Soup option worked great on the Instant Pot



We are fortunate to use the tomato juice and stewed tomatoes from our garden.  The corn, peas and potatoes are from our garden as well.  The beef we purchased is from a local farmer, and one of my grain customers.  Using food we have grown in the garden, and supporting other local farmers is something we can show our kids how it's possible to grow healthy food for their family one day. 


I was very pleased how this turned out. The cook time was faster with the Instant Pot, and the flavors were still there.  I can't wait to try more soups and stews.  Enjoy!


INSTANT POT BEEF VEGETABLE STEW
PRINT RECIPE
Ingredients:
2 pounds sirloin steak, or stew meat
1 onion diced
2 cloves garlic minced
6 oz can tomato paste
16 oz tomato juice
16 oz stewed tomatoes
2 tbsp worchershire sauce
3 cups of red potatoes, cube
½ pound mini carrots
16 oz green beans
4-5 stalks celery
1 tsp oregano
1 tbsp dried parsley
1 bag frozen peas
3 cups frozen sweet corn
¼ cup flour
¼ cup water
Salt & Pepper to season


Instructions:

  1. Place the stew meat in the bottom of the Instant Pot, add all ingredients besides frozen pea, corn, and flour/water mixture.  Stir.
  2. Lock lid and set seal to close.
  3. Select the Stew/Soup option.
  4. After cooking, quick release the pressure, open valve, and be careful with steam.
  5. Stir in frozen corn, peas, and water/flour mixture. Stir until stew thickens and corn/peas are warmed.

Crock Pot Spicy Cheesy Chicken Spaghetti


There is a recipe I have always wanted to try, but add my own twist to it.  I was craving cheesy chicken, and adding spaghetti at the end. This Crock Pot Spicy Cheesy Chicken Spaghetti is a ramp-ed up version of Crock Pot Cheesy Chicken and Rice.

All the flavors of cheese, chicken, and spices together are perfect and this is going to feed lots of people! This may be my daughter's favorite new dish!

Chicken breast worked great for this recipe.  Chicken thighs would be good and tender, too.  I added more heat to this recipe by adding Frank's hot sauce. 

Our house LOVES angel hair pasta.  Once you use angel hair, it's hard to go back to regular spaghetti.  Pick whatever your family loves! You may not have to use the entire box, add a little spaghetti at a time and stir it in.

CROCK POT SPICY CHEESY CHICKEN SPAGHETTI
PRINT RECIPE
1 bell pepper, diced
1 sweet onion, diced
1 small can diced green chiles
1 can mild Rotel diced tomatoes and green chiles
½ tsp garlic powder
½ tsp cumin
Salt & Pepper to taste
2 lbs chicken breast
2 cans Campbell Cream of Chicken soup
3/4 - 1 lb box angel hair spaghetti
2 bags Kraft Mexican cheese


DIRECTIONS
  1. Place peppers, onion, chiles, diced tomatoes, garlic powder, cumin,chicken, 2 cans cream of chicken, and 1 cup of shredded cheese in crock pot. Stir ingredients together.  
  2. Cook on high for 3-4 hours. Remove chicken breast and shred.
  3. Return chicken to crock pot. Add cooked spaghetti and a Kraft Mexican Cheese.  Salt and pepper to taste. Mix well.
  4. Add cheese on top.
  5. Cover and cook on low for 30 minutes. Serve.

Snickerdoodle Blondies


I absolutely love snickerdoodle cookies.  My mom made them all the time. I knew when I found this recipe for snickerdoodle blondies, I had to try this.  





Snickerdoodles recipe calls for cream of tartar, which most cookie recipes do not.  Cream of tartar gives the snickerdoodles a tangy taste and helps the chewy texture.


Snickerdoodles are similar to sugar cookies, but the taste changes when cinnamon is added. 

Some times, easy recipes like Snickerdoodle Blondies or Chocolate Chip Cookie Bars are the best way to create something when you are craving cookies.






SNICKERDOODLE BLONDIES PRINT RECIPE
1 cup butter, melted
2 cups sugar
2 tbsp milk
2 large eggs
2 ¾ c flour
1 tsp baking powder
½ tsp cream of tartar
¼ tsp salt

Topping
2 tbsp sugar
1 ½ tsp cinnamon

Preheat oven to 350 degrees.
Grease and flour a 13x9 pan, or line with parchment paper.
Combine melted butter, sugar and milk.
Add in eggs, stir until combined.
In a separate bowl, combine flour, baking powder, cream of tartar and salt.
Stir in butter mixture until combined.
Pour batter in 13x9 pan.
To make the topping, combine 2 tablespoons sugar and 1 ½ teaspoons cinnamon. Sprinkle over the batter in the pan.
Bake 350 degrees for 25-29 minutes.

You can use your favorite crock pot, but we like using our Colts Crock Pot, especially during the football season. It makes for fun conversations! 

This weekend, the Colts honored Peyton Manning in Indy. They retired his number, 18.  The unveiled a bronze statue of Peyton Manning, placed outside of Lucas Oil Stadium.  Peyton Manning was the first round draft pick in 1998.  Manning holds many NFL records, including passing yards, touchdown passes, AP MVP awards, Pro Bowl appearances, 4,000-yard passing seasons. Manning is also the only quarterback to start the Super Bowl for two different franchises more than once each and the only starting quarterback to win a Super Bowl with two different franchises. Manning is the oldest quarterback, at the age of 39 to start in and win a Super Bowl!

While the Colts have a lot to celebrate with the accomplishments of Manning, it's time to focus on the food.  Appetizers. Cheese. Sausage.  Brown the ground sausage on the stove, then add everything in the crock pot. Turn on low and stir occasionally.

CROCK POT SAUSAGE QUESO DIP

¾ lb ground pork, browned
½ lb Velveeta Cheese, cut in ½ in cubes
10 oz can diced tomatoes & green chiles
8 oz cream cheese, cut into cubes


1. Brown ¾ lb of ground pork.
2. Cut up ½ lb of Velveeta cheese into ½ inch cubes.
3. Place Velveeta Cheese in a crock pot sprayed with Pam, or use crock pot liner.
4. Place cream cheese in crock pot.

5. Drain 10 oz can of diced tomatoes and green chiles, and put in crock pot.
