A few months ago, a friend shared a recipe on Facebook, Black Bean Corn Salsa. It was perfect timing since it was sweet corn season, and this looks fresh and delicious.
It took me a few months to finally plan to make this dip and to be able to enjoy it myself. And I mean me. No one else even tried it. They are salsa lovers, not BB Corn Salsa lovers, and I am ok with that. More for me.
This recipe is easy, no cooking is required. It is perfect for summer time, winter time, tailgating, or super bowl!
Black Bean Corn Salsa
Rinse & Drain 1 can balck beans
1 can RoTel Diced Tomatoes with lime juice and cilantro
Add 2 ears of corn cut from the cob, or I use freezer corn in the winter time
Toss with dry Ranch Mix and 4 cloves of pressed garlic
Enjoy!
